1. Xanthan gum is a biopolymer prepared by Xanthomonas rapesae of cabbage black rot using corn starch and bioengineering. It is a biopolysaccharide composed of glucose, mannose, glucuronic acid, acetic acid and pyruvate. The molecular structure of xanthan gum determines that it has unmatched properties of other polymers: 1. High viscosity at low concentration; 2 Good flow thixotropy or pseudoplasticity; 3 Acid, alkali, salt resistance, antioxidant, enzymatic hydrolysis; 4 Temperature resistant, stable in several freezing and thawing processes, stable under high temperature conditions; 5 Good compatibility with acids, bases, salts, reducing agents, surfactants, preservatives, natural or synthetic thickeners in the same solution system; 6 Good dispersion, emulsification stability and suspension of particles, oil droplet ability.
